CHOCOLATE MOUSSE

One of my favorite things to bring to a social gathering is dessert.  Being a holistic health coach and personal trainer, people always assume that I would never indulge in dessert, WRONG!  I love a chocolaty dessert just as much as the next woman, especially in that time of the month!  I am always tempted to eat desserts when they are around at a party, so I know if I bring a quality dessert, I’m less likely to be tempted by unhealthy options and I will have something that I don't have to feel guilty about.

 

This chocolate mousse recipe is to die for!  It is rich and your one serving will leave you feeling satiated, full and of course just like most ladies that have had their chocolate fix, happy!  It is full of healthy fats, protein, fiber, antioxidants, iron, magnesium, and does not contain processed sugars! Cacao powder has natural elements that have been found to have incredible benefits throughout the body, such as lowering LDL cholesterol, improving heart function, reducing cancer and it is a natural mood lifter and antidepressant.  Sign me up!

Overview

  • Serves: 4
  • Prep time: 10 min
  • Cook time: 10 min
  • Difficulty: easy

 

Mousse:

  • 1 organic banana
  • Flesh of 1 large or 2 small organic avocados
  • ½ cup cacao powder
  • 1/3 cup coconut milk (canned/ free of guar gum)
  • 6 organic medjool dates (pitted)
  • 2 tbsp date syrup
  • Pinch of sea salt

 

Chocolate Sauce:

  • ½ cup cacao powder
  • 6 tbsp date syrup
  • 2 tbsp coconut oil
  • ½ cup coconut milk

 

Serve:

  • With a dollop of coconut yogurt (or any plain yogurt you like)
  • A sprinkle of unsweetened shredded coconut

 

Execution:

  • Pit the dates and boil them in water for 5-10 min until soft (then drain water)
  • Put all mousse ingredients into food processor and blend until smooth
  • Spoon even amounts into 4 small dessert dishes and place in the fridge to chill
  • Place coconut oil date syrup for the sauce in a small pot on low heat. Slowly stir in cacao powder, then whisk in coconut milk (slowly add more if the sauce isn’t at the right consistency)
  • Take your mousse out of the fridge, drizzle chocolate sauce over the top then add a dab of yogurt and your shredded coconut on top!
